I can only give you a partial translation but I hope someone will come and help you.
Am I? = Ben ik?
That's the literal translation, but it's not correct idiom in Dutch. In Dutch I would say "Is dat zo?" (Is that true?), "Is dat echt zo?" (Is that really true?), "Vind je dat echt?" (Do you really think so?) or simply "Echt waar?" (Really?)
You're so sweet. = Jij bent zo lief.
Ok.
Are you courting me again? = Maak je mij weer het hof?
That's correct Dutch, but it has a formal, slightly archaic tone, which is not very appropriate for this type of letter. Better:
"Ben je me weer aan het versieren?" (Are you seducing me again?) or "Probeer je me weer te versieren?" (Are you trying to seduce me again?)
I'm sorry to be so cold but you know very well how I think about us. = Het spijt mij dat ik zo koel ben, maar jij weet wel wat ik over ons denk.
Better "hoe" instead of "wat".
Maybe in Dutch you understand it better! = Misschien kan je dit in het Nederlands beter begrijpen.
I would remain closer to the literal translation here:
"Misschien begrijp je het beter in het Nederlands."
