But in my Dutch language book I have: Ámsterdamse grachten.
Is the stress on the first syllable wrong ?
Please answer me.

Well, if you sing it (and this is a famous song) it is

"Áán de Ámsterdámse gráchten
héb ik héél mijn hárt voor áltijd verpánd"

But that is because that the meter of the song. There often is a secondary accent on the first syllable [ˌɑmstərˈdɑms], but the main stress in on the last syllable, as it is for Amsterdám itself as well.
