How to say ACCEPT in the following case?

My question has also to do with the correct preposition to use, actually.

Ik ben door or tot or in het universiteit aangenomen or aangevaard

Can you also use opgenomen in the sense of to be admitted to the university, or is this verb only used to be admitted to hospital?

Among your options, I guess "Ik ben door de universiteit aanvaard" is the best one (note that "aanvaarden", while starting with "aan", is not a separable verb, and has a past participle without "ge-"). Not "aangenomen", and definitely not "opgenomen", which does indeed refer mostly to hospitals or psychiatric institutions. More colloquially, for competitive admission processes like that, people will often say "Ik ben binnengeraakt in ..." ("I managed to get into...").

Ik ben tot de universiteit toegelaten = I have been accepted/admitted as a student
Ik ben door de universiteit aangenomen = I have been accepted for a job at the university, say as a lector or maintenance person
aanvaard is used more voor ideas, concepts, not people

opgenomen is pretty much limited to hospitals, although you can say it about groups, say "hij werd al snel in die groep opgenomen" in the sense of being welcomed as a group member.

Toegelaten sounds great.
While i am at it, is there any difference between toegelaten and toegestaan? are the two almost always interchangeable?

They have different kinds of objects: after "toegelaten tot" comes a _place_ one is allowed to enter, after "toegestaan om" comes an _action_ one is allowed to do.
