I guess you mean "Ze vertelt altijd veel over haar leven, maar ze informeert nooit naar mijn leven!" (She always tells a lot about her life, but she never inquires about my life!). The verb 'informeren' needs 'naar' as a preposition. We can't use 'van' with the verb 'informeren'.

I'm not 100% sure if I understand your question correctly. But 'ben' in sentence 1 is not replaced bij 'hij' in sentence 2. It is replaced bij 'is' because in sentence 2 you have a main clause and a sub clause. The subject of the sub clause in sentence 2 is 'hij' so the verb 'ben' changes into 'is'....

'om' + 'te' is very difficult so it's not strange that you are struggling with it! About your sentence: 'Dit brood is oud omdat het lang heeft geduurd' would be grammatical correct but not in meaning yet.
