should be What are you listening to?

Could we say > Wat luister je naar?

or why not?

No, we can't use 'wat' in this sentence. If we want to say 'wat + preposition' it changes into 'waar'.

Compare the following sentences:

'Wat luister je?' ==> 'Waar luister je naar?'
'Wat zie je?' ===> 'Waar kijk je naar?'
